When a perfectly displayed plate of food is served, it is quite understandable that one might compare the Chef’s presentation to a work of art. But can the trade of an artisan butcher be seen with the same artistic reverence? In a society where the trade is becoming less popular and where terms like "vegetarian", "vegan" and "living foods" are part of today's hot topics, an older clientele still seems to enjoy the delights of a macelleria. To honor the theme of this magazine, a visit behind a meat counter was called for. Salvatore, our friend from the Sila butcher shop, brought us on a discovery tour, revealing the art behind the meat!
